Jivara is a milk chocolate but which stands out from other chocolates. Indeed, it has a more assertive taste and its cocoa accents are much more present. Created in 1995, the Jivara wanted to be a milk chocolate with a much more pronounced cocoa flavor. To achieve this intensity, Jivara is made by blending different cocoas from Ecuador and Ghana.

And for tempering

  1. Melt the chocolate at melting temperature (45/48 ° C).
  2. Temper a desired amount of chocolate, being careful to always keep a quantity of hot chocolate.
  3. Continuously mix the mass and check the crystallization temperature (27/28 ° C).
  4. Once crystallization has been achieved, stop cooling and add the hot blanket to reach manual working temperature (29/30 ° C). Or you can increase the temperature by heating in a water bath.
  5. Confirm working temperature and stir regularly to keep crystallization and temperature homogeneous.

Ingredients

Cocoa butter, whole milk powder, sugar, cocoa beans, brown sugar, natural vanilla extract, emulsifier: sunflower lecithin, barley malt extract.

Possible presence of: nuts, soya.

Store in a dry place between 16 and 18 ° C
