What is fondant pâtissier?
It's a preparation made from sugar, water and sometimes glucose that is used to glaze pastries.
It is the 100% sugar icing on the top of eclairs that is much too good.
How do you use fondant?
Nothing could be simpler:
- Melt it in a bain-marie so that it heats up gently. You can use the microwave but be sure not to heat it too much.
- At 35 - 37 degrees, it is the ideal temperature for covering your éclairs.
- Never heat it above 39 degrees as it will no longer have that shiny side you're so keen on.
A few tips :
- if you want a chocolate flavour: add cocoa powder
- if you want a coffee flavour, add a few drops of coffee extract
- yes, you can colour it
- After use, close the jar tightly and place it in your cupboard.
Ingredients: sugar, glucose syrup (contains sulphites) and water.
Keep preferably in a dry place at a lower temperature then 20°C.
