What is an emulsion?
An emulsion is used to flavour pastries with a richer and more intense smell and taste than concentrated extracts.
They are microencapsulated in natural stabilisers and suspended in a water base. This allows the full flavour to be maintained while allowing a preparation to be exposed to very high temperatures.
Emulsions can be added to all kinds of preparations such as cakes, biscuits, icing and fillings.
What do LorAnn emulsions contain?
Emulsions are composed of natural and artificial flavours, water, propylene glycol, gum arabic, xanthan gum, citric acid, etc. Some ingredients may vary depending on the flavour of the emulsion.
They are gluten-free, kosher, water-soluble and sugar-free.
Ingredients
Vanilla extract: flavour, water, humectant: E1520, acidity regulator: E330, ethanol (Kosher certified, wheat gluten free, contains alcohol, soluble in water).
Butter Vanilla: water, propylene glycol, modified starch (corn), xanthan gum, preservative: E202, artificial flavor.
Almond: water, propylene glycol, natural and artificial flavouring, gum arabic, xanthan gum.
Coffee: colour: E150, water, propylene glycol, natural flavouring, alcohol.
Lemon: water, propylene glycol, natural flavouring, gum arabic, xanthan gum, preservative: E211.
Pumpkin Spice: water, solvent: E1520, natural and artificial flavouring, xanthan gum, solvent: E1518, alcohol.
Marple: water, solvent: E1520, natural and artificial flavouring, xanthan gum.
Strawberry: water, propylene glycol, natural and artificial flavouring, glycerol, alcohol, beetroot juice, xanthan gum, colour: E129*, E133.
Raspberry: water, propylene glycol, natural and artificial flavouring, xanthan gum.
Pistachio: water, propylene glycol, alcohol, natural flavour, artificial flavour, xanthan gum, emulsifier: E413.
Princess Cake & Cookie: water, propylene glycol, natural and artificial flavouring, xanthan gum.
Hazelnut: water, propylene glycol, colour: caramel, natural and artificial flavouring, alcohol, xanthan gum, corn syrup, sugar, molasses.
Coconut: water, propylene glycol, artificial flavor, xanthan gum.
Red Velvet: water, propylene glycol, colour: E129*, xanthan gum, alcohol, colour: E133, natural and artificial flavouring.
Rum: water, propylene glycol, natural and artificial flavouring, xanthan gum, alcohol, colour: E150.
*E129: may have an adverse effect on activity and attention in children.
May contain traces of: egg, peanuts, soy, milk, sulphur dioxide and sulphites (E220-E228) at concentrations of more than 10 mg/kg or 10 mg/l, expressed as SO2.
Adding flavour to a pastry
Emulsions give your pastries a unique taste. They are long-lasting and can withstand high temperatures and can therefore be used to flavour all kinds of delicacies: icings, cakes, pie or biscuit bases, desserts or fillings. However, emulsions cannot be used to flavour chocolates and hard candies.
Once you and your family have tried flavoured pastries, you will not want to do without them. Emulsions are now a must-have ingredient in the preparation of pastries. Their unique taste adds a delicious personal touch to your treats. In addition, the different flavours allow you to prepare cakes with very distinct tastes from a single recipe.
How to use professional baking emulsions?
To add flavour to any of your pastries, choose from the different LorAnn emulsions: "Butter and Vanilla", "Coconut", "Hazelnut", "Lemon", "Raspberry" and "Strawberry".
Once you have prepared your cake batter, shake the bottle of emulsion of your choice and add one to three teaspoons to your mixture.
Then mix your pastry so that it soaks up the emulsion and put it in the oven. Your pastries will already have a delicious smell during baking.
By choosing a different flavouring or additive for your cake than for your filling or icing, you will pleasantly surprise your friends and family. Just be sure to choose flavours that work well together.
