What is Baking Soda?

Baking soda is a leavening agent.

When combined with acidic ingredients (such as yoghurt, vinegar or lemon juice) and exposed to heat (from your oven), bicarbonate of soda reacts to release carbon dioxide, which causes your cake to puff up.

Baking soda is used in recipes that already contain acidic ingredients, such as pancakes or yoghurt cakes.
