Preparation
Preheat the oven to 175°C (convection oven 165°C).
The ingredients must be at room temperature.
For a Ø20 cm cake: mix 250 g of mixture, 230 g of eggs (4½ pieces) and 20 ml of water in a bowl. Mix on high speed for 8 to 10 minutes. Then mix on low speed for a further 2 to 3 minutes. Pour the batter into a greased cake tin (1/2 to 2/3 full).
Place the cake in the oven and bake for 35-40 minutes. Don't open it while it's baking!
The cake is ready when it is elastic to the touch. Unmould the cake immediately after baking and leave to cool on a cake rack.
