Preparation instructions for a perfect sponge cake

1. Preheat: Preheat the oven to 175°C (convection oven to 160°C).
2. Ingredients: Make sure all ingredients are at room temperature.
3. Mix:
   - Place the mixture, eggs and water in a bowl.
   - Mix on high speed for 7 to 8 minutes.
   - Then mix on low speed for 2 to 3 minutes.
4. Cooking:
   - Pour the batter into a buttered baking dish, 2/3 full.
   - Place in the oven without opening the lid.
   - The cake is ready when it is elastic to the touch.
5. Cooling: Turn out immediately after baking and leave to cool on a wire rack.
