What is a dummy cake?
Dummy cakes are pieces of polystyrene cut into different shapes and sizes. They can be used to create large set pieces, for example, or to display small pastries.
Why use a polystyrene dummy cake?
Dummy cakes can be used to make a wide range of preparations, including :
- Display cakes: the main advantage is that polystyrene is not perishable. So they're perfect for creating a pretty decoration in your window.
- Impressive preparations even if the number of guests is small.
- Cakes for weddings or other events: dummies can be used for photo shoots, for example, while the real cake is in the kitchen. This considerably reduces the risk of accidents.
But decorative dummy cakes also have another use, as excellent teaching aids. They make it easier for someone just starting out in pastry-making to learn how to make toppings, glazes and other sugarpaste creations.

A few tips on how to use a dummy cake properly
It's not enough to simply place your sugar paste directly onto your dummy cake. It is advisable to apply a layer of Crisco vegetable fat, which allows the sugar paste (which is dry by nature) to adhere to the dummy cake. Then simply immerse the dummy in hot water, which will melt the sugar paste. It's easy to reuse.
