Isomalt is a pure product and is resistant to humidity. It can be colored and flavored in its heated form.
Preparation of isomalt:
- Put 10g of water with 100g of isomalt in a saucepan.
- Heat over low heat while stirring.
- Remove the pan from the heat when the mixture reaches 170 ° C.
Warning: risk of burns
Note: above 185 ° C, the mixture gets darker.
